Snicker Yummy Doodles!!!!!!!

I LOVE the Holidays....the lights, the tree, giving gifts and just really remembering how AWESOME my family is!!! But I also love all the treats...cookies, fudge, cakes, cookies and more cookies. So when the cookie season hits there is always one cookie that I must make no matter what.....Snickerdoodles. However it wasn't till last year when I stumbled upon a recipe on my friends Blog that really amped my usual Snickerdoodle recipe to a whole new level.

These cookies will melt in your mouth....by the time you put them out you will have to turn around and make a new batch! It's a good thing I have been going to the gym because I have eaten these for all three meals and then some (really nutritious right!).

SO get ready to have your taste buds blown away ( I just got a very disturbing vision of what it would look like if your taste buds really did get blown away). But anyway on to the COOKIES!
Oh My don't these look Divine!!!!

 Cinnamon...it really makes your house smell like Christmas!!!!

 Start by creaming together 1 cup of sugar and 1/2 cup of softened butter.

 Next add in 1 egg and 1/2 tsp. of vanilla.

 In a separate bowl combine 1 1/2 cups of flour, 1/4 tsp. salt, 1/4 tsp of baking soda, and 1/4 tsp cream of tarter.
 Combine the flour mixture with the butter mixture until it makes a nice soft dough. So EASY!

In a small bowl add 2 tbs. of sugar and 2 1/2 tsp. of cinnamon......this is where the magic is!

 Take your dough and shape it into 1 inch balls.....a special thanks to my assistant Keegan!

 Roll it around in the sugar/cinnamon until it's coated.

 Place your cookies on to a greased cookie sheet or parchment paper. Bake at 375 for 8 to 10 minutes and let them sit for a minute or two after you take them out.


Then Enjoy, Stuff, Nibble ......Whatever tickles your fancy:)


Ma Kauffman's Snickerdoodles (found on my friend Sarah Short's Blog)

Preheat 375 degrees
Bake 8 to 10 minutes

1 cup of sugar
1/2 cup of butter, softened
1 egg
1/2 tsp. vanilla
1 1/2 cups of flour
1/4 tsp. salt
1/4 tsp. baking soda
1/4 tsp. cream of tarter
2 tbs. of sugar
2 1/2 tsp. of cinnamon

Busy Busy Nesbits

I first off have to apologize to all my blogging friends....I have FAILED you!!!!! It has been two weeks since I have been on here but I have been attacked by boxes, tape, Christmas Shopping, and three very busy boys!

When I say boxes and tape I refer to moving boxes and packing tape......that's right we are on the move again...next stop Tunica, MS.

We are getting ready to move closer to my in-laws for a short while until the next job starts up in TN. I can't tell you how excited I am to move......we are going to be closer to family and it's going to be ten times warmer there.

It looks like everything got blasted by snow.....and it is sooooooo cold here. Michigan in the winter seems like a nice tropical get away compared to this North Dakota winter. Believe me when I tell you this little momma will not be missing this!!!!!

So bear with me, we are moving Friday and after that I promise you I will be back on top of my game!!!!!

Hey Where Did You Get That Hat??????

Isn't that the sweetest face you have ever seen? Awe my sweet Lennon Boy....but that is not the reason why we are here, the reason is the hat. This hat has been getting a ton of attention...every where we go I have people asking me "Where did you get such a cute hat"?

So to Answer every one's question...I have a friend who makes these hats! She makes owls, puppies, snowmen, turtles and they are all so CUTE!!!! Chocolate Mint Chocolate Chip Cookies.....

There are some ingredients that when you put them together Fireworks go off....well that's what happened today when I add mint and dark chocolate chips to a chocolate cookie....oh me oh my....

I LOVE Chocolate, any type and in any form.....so when I came across this recipe I knew the stars must have aligned to bring me such a precious recipe...Ok Ok I will try to get myself together. Don't these look yummy!

 I found these babies at my local supermarket....I may have to stock up since they are a limited edition:(

 Ok start by whisking together 1 1/4 cups of flour, 1/2 tsp. salt, 1 tsp. of baking powder, and 2/3 cup of cocoa.

 In a larger bowl beat 1/2 cup of butter until smooth and then add in 1/2 cup of brown sugar and 1/2 cup of granulated sugar.

 Why yes I did only use one cup to measure these together....I don't like to waste time:) Beat sugar in with butter until mixed.

 Add in 1 1/2 tsp of vanilla (have you ever tried vanilla by itself...yeah me neither).

 Then alternate the flour and cocoa mix with 1/3 cup of milk....mixing until combined. Now you may be asking yourself did I miss something what about the eggs, well folks no eggs required they were not invited to this party. Plus you have an excuse to eat the dough because it won't make you sick:) Dough will be fudge like. Lastly stir in your chocolate and mint chips... then cover bowl and let it sit in the fridge for at least 15 minutes.

 While the dough is chillin....preheat oven to 325 degrees and place parchment paper on cookie sheets.

Spoon dough onto parchment paper...I made little cookies because then I can trick myself into eating more of them...the tricks I play on myself all for the love of food....
Bake these puppies for 15 minutes and then let them continue to cool on pan...they will continue to set up this way.
One more look ......heaven in a cookie:)

Chocolate Mint and Chocolate Chip Cookies

Preheat: 325 degrees
Bake: 15 minutes ( remember to let them cool on the pan after you take it out)

1 1/4 cups of flour
1/2 tsp. salt
1 tsp baking powder
2/3 cup of cocoa
1/2 cup of unsalted butter
1/2 cup of granulated sugar
1/2 cup of brown sugar
1 1/2 tsp of vanilla
1/3 cup of milk
10 oz package of Dark Chocolate and Mint Chips

What really went down.....

So yesterday I posted a preview of our Christmas Card and you may think oh how cute, those boys are smiling so nice.......no not really. I had the hardest time getting them to cooperate....so here is truth and nothing but the truth on what really happened on that nice sunny day when we were suppose to get the perfect Christmas Card picture.....

 Miles please scoot closer to your brothers.....

Rub-A-Dub Dub Three Boys In A Tub

Did you know that I love my boys!!!!

 I think bath time is one of there favorite things to do.....and we are finally at a stage where all three boys can take one together:) Lennon is loving it....Miles not so much, he feels like he is being crowded.

 Keegan is such a wonderful big brother...here he is teaching Lennon the proper way to make a bubble hat.

Until he gets splashed in the face....oh well they lasted a good 2 minutes before water starting flying. It will be a sad day when the boys are too big to take baths together, until then we will enjoy our bath time and deep down I really do enjoy getting splashed with water by my boys (but don't tell them that).

The Laugh.....

If there is one thing I can say about my life, is that it's never dull. In the last year I have been on quite the journey, leaving home and exploring the west. Not only have I discovered more of myself out here but I have found myself in many bizarre circumstances, much more than I would typically find myself in at home. If you are not sure what I am talking about you can read one of my earlier post where I find myself toe to toe with a tire service man.

But enough about that story because I have another one for you today.

I was out and about a few days ago with my "wolf pack" trying to get some Christmas Shopping done. If anyone has ever tried to shop with three little boys you know how daunting the task can be. So I was a momma on a mission trying to get in and out of the few stores I needed to stop at. By the way can someone please tell me WHY they do not make stores stroller friendly? I have a hard enough time trying to keep my buddies from harassing the store manikins with out having to worry about plowing into one myself.

As the afternoon continued, I was very pleased with how well my little clan was behaving and decided to stop into Eddie Bauer to look around, seeing it was on our way out. It wasn't but five minutes in the store when I heard something coming from the back. I really can't explain what happened next, it was like I was watching myself from the sidelines. The sweater that I had just picked up fell back to the table as I turned towards the sound and made my way to it. It's a good thing that two of my boys were strapped into the stroller I was pushing otherwise I am afraid they would have gotten left behind. The sound I heard sent me into a state of urgency, all I knew, at that moment, was I needed to find the source of this sound.

I swiftly moved to the back of the store, not quite sure what or if I had taken anything out in the process, when I found what I was looking for. There in the back corner of the store were two ladies conversing, then like I heard moments before, one of the ladies threw her head back and let out a very soulful laugh. There it was, but again something was off about it, if only I could put my finger on it.....

That's when it started....you know the twitch you get in your nose and the tingling in the back of the throat. I knew I was going to lose it so I grab the first thing in my reach and bolted to the fitting rooms. Luckily the handicap one was free otherwise I am not sure how we would have all fit. The moment I closed the door the tears started to swell up and fall, one by one like a crack in a very well built damn. Here's the thing usually once I start to cry, like really cry, it's all over from there. Believe me when I tell you I am an ugly crier, I don't look all sweet and pretty, no my nose gets red and my face squishes up. If you don't believe me, I will just have to let you know the next time I am getting ready to have a good cry and invite you to come witness one of the ugliest things you will ever see:)

So here I was crying like a baby in the Eddie Bauer fitting room, with my three boys staring at me like I had lost my mind. Wait was I losing my mind? What was it about this lady's laugh that brought this kind of emotion out of me. Then there it was staring me right in the face...THE LAUGH, not the lady's laugh but the one laugh that brings me such comfort. The one laugh, when I hear it brings the me such joy. My MOTHER'S laugh!!!!

At that moment I missed my momma more than anything. If any of you know my mom then you know she has the GREATEST laugh in the whole world...it is the loudest most soulful laugh.

You see it's not just my momma's laugh that makes her so great, there are a thousand things! My momma has been there for me through a lot of changes in my life. She was patient with me when I was going through a bratty stage in high school, she was not an ounce judgemental when I told her I was pregnant at the age of 20, she sat with me in silence when we left the doctor's office after I miscarried and was still numb, she gave me nothing but encouraging words when I told her we were moving out west and taking her sweet grand babies with us. She let me make my own mistakes and was always there with a comforting hug when I failed.

It was to the point that I would have done anything, even let her corner me in the bathroom so she could pick my face, just to get a hug from her.

After I finished my cry fest in the Eddie Bauer changing room and told myself that I was a 20 something year old women with three kids and this was not appropriate behavior, I wiped my mascara from my eyes and continued on my way.

Now before we go any further I must make something clear, NO I am not pregnant, just the opposite actually if you catch my drift.

So again I find myself leaving a place, shaking my head and asking did that just happen?

All I can say is I can't wait to see my mom over New Years!!!

Oh Yeah and Mom if you are reading this, I was just kidding about wanting you to pick my face....I don't need to ring the New Year in with marks all over my face:)

Minestra with Sausage and Kale Soup

So here is the question to Kale or not to Kale? If your like me I LOVE soup with Kale, it is so hearty plus it's good for you too. Everyone knows I need a break from the butter once and a while. So this soup is a combination of Sweet Sausage, Cannellini Beans and KALE!!!!

Look at that dark green Kale.....this soup is going to be Awesome. One thing I love about this soup is it's simple and I LOVE simple:)

 Here is a little look at the finished soup....Yum!!! So start by heating 2 Tbs of olive oil in a large pot and browning 1lb of sausage ( I used the sausage with sage).

While the sausage is cooking, take 1 bushel of Kale and wash really well. Then take the Kale off the stems.

 Dry the Kale on a clean towel and set aside.

 Cut up one onion and three cloves of garlic, then add it to the pot and continue to cook until softened.

 Next add Cannellini Beans and chopped Kale to the pot, don't worry if it looks like the Kale is overflowing out of the pot it will cook down. Season with salt, pepper, and a dash of nutmeg. Then add 4 cups of chicken stock and 2 cups of water, bring to a boil.

 Add 3/4 cup of Penne pasta, reduce heat and cook until pasta is done (about 7 to 8 minutes).

 Serve it up in a large bowl with a roll or bread.....

It is sooo tasty you will keep going back for more:)

Just another soup to keep you toasty through the winter months because I Love ya:)

P.S. I am going to try this soup with left over turkey from Thanksgiving...will let you know how it turns out.

1 pound of sausage ( I used jimmy deans sage)
1 onion, chopped
3 cloves of garlic, chopped
1 15.5 oz can Cannellini beans
1 bushel of Kale, rinsed and chopped
Salt and Pepper
Dash of Nutmeg
4 cups of chicken stock
2 cups of water
3/4 cup of Penne pasta
