Lemon Spice Cake


First I must apologize I meant to put this on Tuesday but wasn't feeling the best...you know you don't feel good when your in the middle of a post and you find yourself falling asleep and drooling on yourself (not like I did anything like that). So what's today....Thursday, that's right and I am feeling much more like my spunky self minus this deep manly voice I have due to a sore throat.

I could tell it was getting bad when my 5 year old Keegan told me I sounded just like Darth Vader........

Okay enough about me, lets get to talking about this cake.......Lemon Spice Cake.

This cake is soooo good...it's a perfect balance between spice and the tanginess that you get from the fresh lemon juice!

Also this time of year, if your like me and up to your armpits in pumpkin, it's nice to give your taste buds a breather and let them bask in some spicy lemony goodness!!!

Here a look at what you can expect when your finished.....so tasty:) 


So here is what this cake is made of....simple enough.

Start by buttering a 8 in cake pan and then lightly coating it with flour.

Combine 1 1/2 cup of flour, 1/4 tsp. baking soda, 1 tsp baking powder, 1/2 tsp of salt in a bowl.

Next you need 1 Tbs of lemon zest and 6 Tbs of lemon juice (about 2 lemons). Set aside

In a large bowl combine 3/4 cup of sugar, 1 stick of butter, 1 Tbs of lemon zest, 1 tsp of all spice. Beat with a mixer until combined. ( Quick note the original recipe calls for Cardamom but it was $10 for a small container so I substituted it for all spice)

Add 3 Tbs of lemon juice and set the other 3 Tbs aside for the frosting. Beat until smooth. Add 2 eggs, one at a time into the batter.

Next you are going to alternate pouring in the flour mixture and 1/2 cup of sour cream....Start with the flour and end with the flour...Mix, Mix, Mix........
Pour into your floured pan and toss it in the oven for 30 minutes. When done let it sit for a few minutes and then take cake out of the pan and let it cool top side up on a cooling rack.

Meanwhile, you can paint your toes, look through a magazine, do some dishes....oh and make the frosting:)  Take 1 1/2 cup of Confectioners' sugar and add your remaining 3 Tbs of lemon juice, whisk until smooth.
Spread the frosting over the cooled cake.....isn't it pretty, almost looks like it's covered in snow;)



Spiced Lemon Cake

Preheat: 375
Bake: 30 min

1 1/2 cups of flour
1 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. of salt
3/4 cup of sugar
1 Tbs. of lemon zest
1 stick of butter, softened
6 Tbs of fresh lemon juice (from 2 lemons)
1 tsp. of all spice
2 eggs
1/2 cup sour cream
1 1/2 cup of Confectioners' sugar
