Strawberry Pink Lemonade

I have no idea what Mother Nature is thinking...Just last week we were parading around in tank tops, shorts and flip flops as we enjoyed 80 degree temps. But this week it's been rainy and cold, so cold that I had to dig out my winter jacket, which, I was almost positive I wouldn't see anytime soon.
So to kick myself out of this hibernation mood I decided what best to cheer me up than some Strawberry Pink Lemonade.

I have to admit I have never made Lemonade from scratch...I have just always used Country Times Lemonade mix. But today I felt like challenging myself, plus there was nothing else to do and I was trying to avoid the laundry. So after reviewing a few recipes on-line I came up with my own version and ZOO WEE MOMMA is this stuff Good.

I can not believe that I have never made homemade Lemonade before.....It is sooooo easy and does not really require a ton of ingredients.

 Doesn't bright yellow lemons and ripe red strawberries just make you want to smile.....come on Summer get here soon!!!!

First step Squeeze some Lemons....just keep Squeezing, Squeezing, Squeezing.......

Squeeze until your forearms burn.... you will need 1 cup of freshly squeezed Lemon juice, which equates to about 8 whole lemons.

In a pitcher dump in 1 cup of sugar....

Next pour in your cup of lemon juice...I poured mine through a strainer just to make sure all the lemon seeds were taken care of.

Then chop up 1 cup of strawberries and place in food processor, blender, pretty much whatever ya got to make this a puree.

Add this to the Lemon juice and sugar.

Now it's time to get this party started...mix in 5 cups of cold water.

Then to add a finishing touch and to pull it all together add in 1/4 cup of cranberry/strawberry juice.

Now sit back, put your feet up and sip on this while you wait for Summer to arrive:)

Strawberry Pink Lemonade

1 cup of fresh squeezed Lemonade
1 cup of  sugar
1 cup of fresh strawberries, pureed
5 cups of cold water
¼ cup of cranberry/strawberry juice

Mix all together in a pitcher and Enjoyed!

At the Ole Ball Game!!!!

If there is anything that my boys will learn growing up, it's this, to be the biggest Arkansas Razorback fans Ever. My husband is doing everything in his power to mold and shape these boys to be Hog Fans. One of the first things he teaches them when they start learning how to talk is how to call the Hogs. Does anyone out there know the proper way to call the Hogs? Well I will give you a quick lesson in the proper Hog calling ways. It goes something like this....Woooooooo (while raising both arms and expressing spirit hands) PIG SOOIE.....Wooooooooo(again with the arm spirit hands thing) PIG SOOIE(fist pump is a must after each Pig Sooie)......Wooooooooo(one more time for good measure) PIG SOOIE......(than on the third Pig Sooie you end with this) ARKANSAS RAZORBACKS (with a final fist pump here).

Now you can officially call the Hogs....and if your like me and have a husband that is crazy about the Razorbacks, than you will hear this in your sleep. Believe me I have been known to wake myself up while fist pumping and shouting out PIG SOOIE.

So you can only imagine the excitement around here when we found out that the Hogs Baseball Team were coming to play in Memphis!!! To add to the excitement this was the FIRST baseball game that we were going to take Keegan to.

Nothing like feeling the buzz of excitement as Fans enter the Park.

Keegan was in awe....he slowly walked down the stairs to take his seat behind Home Plate. He even asked me earlier that day if Babe Ruth was going to be there.

I don't think I've ever felt more American than standing with my hand over my heart and singing while a pipe organ blasts out the Star Spangled Banner. It's a moment that I want to bask in, standing next to my boy and looking out over the baseball field to an American Flag rippling in the wind. It was BEAUTIFUL.

Look at my boy with that sparkle of amazement in his eyes....Priceless!!!!

Then he spotted something in the distances, I know this look, the look of I really want THAT! He proceeded to lean towards me and whisper, "Momma, can I get some Peanuts like they eat in that song. You know Momma that Take me to the Ball Game Song." Have I told you how much I LOVE this Boy!!! I smiled and replied,"Yes Keegan we can get some Peanuts like they have in the song, besides that's the best part."

 I don't think I have ever seen a kid so excited about a bag of Roasted Peanuts, so Sweet!

 One important thing I am forgetting to tell you is that the Arkansas Razorbacks have the biggest Fans....even though this was an away game, it was a sea of Red Hog Callin Razorback Fans!

Again with the Smile...I can only imagine how much his face hurt after having this smile plastered on for the whole night.

I don't think John could have been any prouder than at this moment....sharing the rules of the game, pointing out the Arkansas players. I was just happy to witness such a special moment between Father and Son.

On top of having an awesome time watching the game, it was Mustache March in which they collected proceeds for the Children's Hospital in exchange for some stick on Mustaches. This sent Keegan into a fit of Giggles, he thought the Mustaches were the funniest things he has ever seen.

We couldn't help but hum the Mario Brother's Theme Song... Hey Luigi!!!!

As sad as it makes me see them grow up, I can't help but love the fact that they are getting old enough to also enjoy and get excited about our little adventures. While Keegan has graduated to going to his first Baseball game, the other two will have to wait, in the mean time they got to spend some good quality time with Nana and Big Daddy. This also gave us the chance to soak up some much need time with our oldest boy and man did he love the attention!!!! So I am going to Savor this memory, the Peanuts, the Field, the feeling you get when you stand and sing the Star Spangled Banner, the Mustaches along with the Mario Brother's Theme Song, but most of all I am going to remember this Smile, the one that reminds us that we hit a home run that night when it came to making a memory unforgettable.

Hanging with my Peeps

There Back!!!! The invasion of the Peeps, they line every store beckoning the nearest shopper to pick them up and take the home. It is one true sign that Spring is just around the corner and these little chicks couldn't chirp better news for those waiting out a long bitter cold Winter. 

I have to say that the packaging is very appealing, even though I am not a huge Peeps fan, I can't help but want to bring the cute little chicks home.

If you are a lover of the Peeps, do not stress and try to buy up a year's supply because they are available year round....hence the "always in season" slogan.

They remind me of little soldiers, all lined up unified.....ATTENTION....at ease little Peep soldiers.....

"George, I have a baaaaad feeling about this place."
"I know what you mean Larry, they look at us like we are something to eat"

Poor little Peeps, they have no idea...."don't worry little Peeps, I won't eat you, your not my forte. "However, I can't speak for the other guys".....sorry!

These on the other hand are my absolute FAVORITE....I am always eager after Valentines Day for the stores to start breaking out these babies.

I love the Pastel colors, they are not only tasty but so pretty.

Awe look a little Peep keeping her eggs warm....

 "You can try to protect the eggs all you want Peeps, but nothing will stop me from getting my hands on them".....little do they know I have a secret weapon:)

This was Lennon's first time eating Peeps and sorry to say, but these Peeps don't stand a chance in this house. He thought they were so funny and couldn't help but giggle at them.

That's until he got his first taste......

Then he couldn't get them in fast enough.

Before he finished one, he was already reaching for another. It was a Peeps freeferal.....sorry Baby but you have reached your Peep devouring quota for the day.

Finishing it off.....between bites he would catch a breath and express his love for Peeps with a MMMMMMM.

This is one Happy Peep filled Boy....look at that sticky yellow smile:)

John Wayne's Casserole with a Splash of Horse Play

Spring is in the air and we are desperately pulling it in, savoring it, and having an absolute blast. There is nothing better than feeling the warmth of the drive way on your bare feet, sending a reassuring warmth to the soles of your feet, that Spring has finally arrived. So since the weather has been outstanding and we Nesbits just cannot get enough of it, I have been backsliding on my wifely and motherly duties...nothing to big just some laundry that can wait until tomorrow, breakfast dishes in the sink that may not get washed until after dinner, and my usual efforts that I put forth towards our daily meals. Don't get me wrong, nobody is starving or going hungry here....it's just that we have resorted to some of our very quick and easy favorites.

Which is okay with me because I am to busy playing outside with my buddies to be stuck inside the kitchen. So here is a quick and easy casserole that freezes and heats up B-E-A-U-tifuly. I am still not quite sure why they call it John Wayne's Casserole....maybe it was one his favorite dishes...you've got me. However, after making it I did want to hang outside the front door and ring a dinner bell, so all my lovely boys could come running in for dinner. "Warsh up Boys, it's time for Supper", I am still contemplating on whole dinner bell idea...

This little casserole will put a hop in that step...and a little fire on the breath....my taste buds are tingling just thinking about it.

To start, brown 2 lbs. of ground beef and drain. Then add in 1 packet of Taco seasoning and water according to the package....let it simmer for 10 minutes to soak up all the seasoning.

While your beef is getting a make over in Taco seasoning, go ahead and make the sour cream topping. Add in 1/2 cup of sour cream, 1/2 cup of mayo, 1/2 of a sliced yellow onion, and 1 cup of cheese...mix it up and set aside.

Heat up 2 tbs. of oil and in a large skillet saute 1 green pepper, sliced and 1/2 yellow onion sliced. I always love the smell of sauteing onions and peppers.

Now it's time to make the crust...take 2 1/4 cups of Bisquick and 2/3 cup of milk...mix until it makes a soft dough. Easiest crust EVER!!!!

In a greased 9 x 13 pan, press the dough until even and make sure it is 1 1/2 inches up the sides. *Sometimes I find it easier when I am working with sticky dough to grease up my fingers, it makes it much easier to work with....but that's me:)

Once you have the dough all pressed out, you can start assembling your casserole. Start with the ground beef that has been simmering in Taco seasoning.

Next dump in a can of Rotel, drained.....spread it around, share the love.....

Remember those saute peppers and onions...how could you forget right? Place em on top of the Rotel.

Next comes the heat...1/2 cup of sliced Jalapenos...oh Baby!!! *If you can't handle the heat, you can omit this step and instead of using Rotel, you can use regular diced tomatoes.

After you have showered your casserole with Jalapenos, spread the Sour cream mixture on top.

Top the whole thing off with some more cheese...about a cup. Place in the oven at 325 degrees for about 30 minutes.

Ding, Ding, Ding......Come and get it!!!! I served this up with a side of red beans and corn bread....it was finger lickin good!
