Shepherds Pie in lue of St. Patricks Day

Tomorrow is St. Patricks Day and to celebrate we are having Shepherds Pie. Don't worry the Nesbits will get their fill of Corn Beef and Cabbage, some of you may be gagging, but being an Irish gal I love me some Corn Beef and Cabbage.

But thats tomorrow, tonight we are talking about some Shepherds Pie and this Pie is the Bomb!!!!

Nothing like the luck of some Irish lads playing under a rainbow.

Except there was no a pot of Gold at the end of this Rainbow, just a bunch of cute boys....

Here it is...oh so lovely and nicely paired with some red wine. So a toast to the Irish, may this year bring you luck and good fortune.

Shepherds Pie

Preheat Oven: 400 degrees
Bake Time: 20 minutes


2 Tbs. Olive Oil
1 medium onion-minced
1 medium carrot-minced
4 garlic cloves-minced
2 lbs. ground beef or lamb (I used beef)
3 Tbs. Worcestershire Sauce
1 small can of Tomato paste
1 Tbs. fresh Rosemary- chopped
1 tsp. fresh Thyme
Splash of Red Wine
⅓ c. of Chicken Stock

Taters Topping

1.5 lbs of Golden Potatoes, peeled and chopped
¼ c. heavy cream
4 Tbs. butter
2 egg yolks
¼ c. Parmesan Cheese, reserve 1 cup for top

1. Boil potatoes, mean while heat olive oil in a large skillet.

2. Brown ground beef until done, mix in Rosemary, Thyme, Garlic, Salt and Pepper. Stir in Carrot and Onion. Mix in Tomato paste, Worcestershire sauce, Red wine, and Chicken stock. Cook until heated.

3. Mash cooked potatoes and mix in heavy cream, butter, salt, pepper, egg yolks, and Parmesan cheese.

4. Place Meat filling in a 9 x 13 oven safe pan and top with Potato mixture, sprinkle the reserved 1 cup of Parmesan cheese on top. Place in oven for 20 minutes.
