Mini Buffalo Chicken Sammies.....

One of my favorite things in the world is a good Buffalo Chicken Sammie....it's my "go to thing" when I am the only one left to order and I have a waiter/waitress staring me down. So it was only a matter of time before  Mini + Buffalo Sammie made their way into my kitchen. YOU can not go wrong with Mini sandwiches...because it is an excuse to have more. So if you go to grab a third or a fourth, and accusing looks are thrown your way...don't sweat just remind them that they are Mini and your suppose to have more than Two:) If the Accusers still don't believe you, send them my way and I will set them straight.




My Salivary Glands are going Bonkers....by the way not to get off topic but Bonkers is a fun word.  I didn't give a step by step because these are really easy to make.

All you need are these few things and you will be on your way!

Mini Buffalo Chicken Sammies

12 pack of Hawaiian Rolls
6 breaded Chicken tenders- Fully Cooked and Halved
1/3 cup of Buffalo Wing sauce- I used medium but you can go hot or mild if you like
Shredded Lettuce
Ranch- I use my own homemade Ranch, but store bought will do just fine


That's It...Super Duper Easy!!!

An not so Ordinary Easter Part 2

So I am back to tell you about the second half of our Easter Weekend Festivities.....bare with me because all these storms have brought on some major allergy issues, so I am not on top of my game (well the truth is I don't think I am ever on top of my game, I am just lagging behind more than usual today). So we left off with the Easter Egg Hunt on Saturday...and afterwards we retreated home to dye eggs.


We decided to try something new...an experiment if you will...we dyed both brown eggs and white eggs to see the different outcome.


We also used glitter....to make our eggs stand out even more.....to give them that eggtra star quality:) I know terrible pun but it was there so I had to use it.


 Here is a look at some of our finished eggs...can you tell what dyed ones are brown and what ones are white? The glitter ones don't count because we didn't dye them at all.


Here it is the one of the left is the brown egg and the one on the right is the white egg....both dyed in the same color green....for the same amount of time;) I love experiments and I have to say I prefer the brown dyed egg over the white dyed egg, it is more primary in color.


Miles showed off his impressive skills in egg dying, except for the fact that he handled them like they were indestructible and we ended up with a bunch of cracked eggs. It's all fun and games until someone starts cracking eggs, just kidding we let him slide since he is still new to the concept.


 Finally we reached Easter Sunday and it was wonderful. The weather was warm and the sun was shining, so we took advantage and did a few more experiments.....if you haven't caught on this is a normal thing around here:) So this little experiment was brought to you by the Easter Bunny and so when we got out of church the boys couldn't wait to get home and try it (when I say boys I mean all of them, John is just another kid when it comes to experiments).


 5....4....3....2....1..... Blast off....Mentos and a 2 liter of Coke can do amazing things:)

Keegan pulled the cord this time and I wish i would have gotten a picture...because a geyser of Coke shot up 20 feet in the air.

Miles was bird watching...he thinks it's funny when they dive from tree to tree. The greatest thing is it is FREE entertainment...I love things that don't cost me a thing:)


So after we had a Fancy Easter dinner of ....wait for it......Chili Cheese Hot Dogs!!!! Okay I know what your thinking "Chili Cheese Hot Dogs for Easter Dinner....REally?", but I just wanted to enjoy some time with my family and the thought of being stuck inside listening to all their giggles come from outside...I couldn't do it. So after we feasted, we decided to take a walk.


These are my favorite moments...the last piece of the day coming to an end...the light from the sun reflecting on my boy's faces while it slowly slips behind trees.


I love watching my boys from afar...as they recap the day and experiments with their dad....I love hanging back and soaking in moments like these.  As if it were vital to soak up every last bit of the day, I couldn't be happier.


Sunday, as we walked the streets I couldn't help but be reminded of God's Beauty. For this is the real reason we Celebrate Easter anyways...right? To remind ourselves that God offered his own son to save us...God's Love is a powerful and poetic thing.


 I love this wall by the way....how the paint is chipping off and reveals another color and layer.


My little town of Tunica is filled with lovely gems like this one....old buildings that carry a story.


Miles, my little lion cub....come out it's time to head home the day is ending.....


So even though we didn't do Easter Sunday by the book...it was nothing less than Magical. Like so many memories, I will fold this one up, but it in my pocket and pull it out on a rainy day. Look at how the sun dances on that family.....wait that's right my FAMILY...

The Hunt......Easter Weekend Part 1

So did you survive? We here have declared this day Lazy after Easter Weekend Monday, I know it's real zinger. To make this Lazy Monday even better a storm has decided to blow through and I couldn't be happier than Peach.
It's hard to believe I took this picture at 11:00 this morning...nothing but dark and cloudy skies. But every now and then I am thankful for days like these, it pushes me back inside, makes me slow down and lets me pay some much neglected attention to the things I need to get done around this house (laundry, toilets, floors, changing sheets....this list could go on forever).  Also it gives me a chance to edit some photos from this past week and weekend and share them with you:)


Friday was a busy day...we did a lot of running around but we managed to squeeze some quality pool time out of the day. This pool is compliments of Gram Austin....Thanks for sending the Boys some Easter money:)

This is Lennon's favorite thing to do...he climbs aboard and I push him around, I think he has the better half of the deal.


I love his swim suit...it makes him look like a little surfer.


Saturday we began the Easter Festivities with a local Egg Hunt...the boys are patiently waiting to go outside.

The two older Boys came back Victorious. I love watching the determination on their little faces when things become competitive.


Even Baby Lennon got his little chubby hands on an Egg or Two.

Next up were some games...Miles played the Bucket game.


Keegan dominated the Pin the Tail on the Bunny game...he even received a ribbon.


Overall it was a great time just being with the Family, no plans just living in the moment, blowing bubbles in the wind.



 Taking one breath in at a time, through a whistle of course.

What happens when your at School.....

I love my oldest son Keegan so much, so it breaks my heart when I have to fib a little about what we do while he is at School. He is so worried that we will have all this fun without him, so I try to put on my poker face and tell him that the fun doesn't start until he gets home. I think he is afraid that we will throw some wild party or something when he isn't here. So to get him out the door I tell him that none of that nonsense happens while he is gone.


So if you can keep a Secret, I will let you in on what really happens while he is away.........

 We like to celebrate a new day here in the Nesbit's house....and what would a party be without Pajamas, old party hats, and deflated Chick-Fil-A Balloons....because a party isn't a party without Balloons.


Don't tell Keegan, but we have been known to get a little rowdy, while Celebrating the Day.


Miles in particular....this Boy knows how to Party with Style


Comeback Miles....the Party stays in the Yard, plus I am sure the neighbors would love to see me running through their yard in my holey pajamas and wild bouffant hair.....(insert sarcasm here).


Even Baby Lennon gets down...while we rock out to some Pandora in the back yard. "Shake your Groove Thing, Shake your Groove Thing, show them how you do it Baby".....


I tell Miles that he must not even mutter the word "Party", otherwise we will have to end all morning celebrations in lue of upsetting our "Big Broder"....


Nothing like starting the day with the Sun shinning in your Face......


Yes, Miles I have already told you how fabulous you look in your Party Hat....what you want me to tell you again....oh brother!!!!


It's okay who needs pants when you a rocking that Hat.....this is a no pants required party if you are under the age of 3:)


I know I think he looks silly without pants too....but we will just let him be Miles......


So if Keegan asks we do nothing but sit and wait for our "Big Broder" to get home, so we can have Fun.....

A BBQ, Mud bug, Flower Planting Weekend


First off I owe all my fellow readers a Big Fat apology, it's been close to three weeks since I have blogged about my crazy wild life....but that's just it, since it's wild and crazy sometimes it's good to step back, get your focus and then dive back in. Also another big reason I haven't been around is because a little doggie decided that my power cord to my lap top looked like it might be a tasty treat. Hence I had to go out and buy a new one and having a Mac means that it didn't come cheap:(

So you may be wondering what I've been up to...well nothing out of the ordinary for me, just making a mess and cleaning it up:) There are a few good stories to be told but those will have to be another time and a different post, today however will just be a run down of our busy pack filled weekend.



This weekend we kicked off Riverfest in our little town of Tunica.


 The boys got a chance to feel like real cowboys with some pony rides, ride um Cowboy.


Almost had to look twice, thought I seen John Wayne riding through town.

Nothing like lining the streets up with overpriced games and carnies.


Oh yeah I could smell the hot grease a mile away....this weekend's calories went to the dogs.


Don't look at me like that, I know that I am going to regret this deep fried Snickers when it shows up on my thighs but for now I am savoring this dough fried masterpiece.


It isn't a Celebration without some Shaved Ice....What's your favorite flavor?


What a happy boy with his cup of Blue Raspberry Ice...Blue Kisses for everyone, okay maybe not everyone but this Momma will gladly take a Blue Kiss from this boy any day.


Making our way down Crawfish Alley....all I can say is I was not prepared for what happened next.


It was like making my way into the Secret Garden...but it wasn't a Garden it was a Bar where all the locals came together. Hey look it's my neighbor with her twin girls....Hi neighbor fancy meeting you here.


Here it is a big ole pile of Mud Bugs or aka Crawfish....It is kind of a culture shock watching everyone carrying around large plates of these little guys like it's an everyday thing...well it might be an everyday thing (shhhhh don't tell but I am still new here).



Hello little friend. I wish I could lie to you all and say that this was the end of our little meeting but it's not. I looked around to all my fellow neighbors up to to their armpits in Crawfish, took a deep breath, rolled up my sleeves and dug in.  All I can say is that Crawfish taste like shrimp but with a whole lot more work involved just to get a itty bitty piece of meat.


On the other hand I had a Wonderful opportunity to give back to the community through our Church by giving away potted plants and flowers.


It was great seeing everyone get their hands dirty.


I think we gave over 400 pots....Amazing.


The kids had a blast and even though it was freezing...we didn't let that damper our high spirits.


The best reward was seeing the faces of all the people who received a free potted flower.


Then to put the cherry on top of an awesome weekend was my husband and his father taking third place in the BBQ competition. My husband if you know him, loves to Barbecue and to see him be victorious was wonderful. I was so proud of him and by the large smile that plastered his face the rest of the night, I could tell he was proud of himself too.
