Wide Awake!!!

I have embarked on a new journey....the journey of a third shifter. There takes a "special" person to be a third shifter and I would like to fully admit that I am one of these special people. I have always been a night owl, staying up late to the wee morning hours and sleeping in (oh how I love to sleep in). So when asked to cover a co-worker's maternity leave on third shift, I was very much obliged.

Let me make a statement....third shift is great, if you do not have CHILDREN. Oh heavens me! Although I still find it not all that difficult to stay up, its not that easy switching from days to nights once you have a day off. I am truly thinking about investing into a day clock, the kind my retired grandparents have to tell them what day of the week it is. Because regardless of the matter I still have laundry, little people and one big person to feed, appointments to make and as silly as it sounds most places are not open at 2:00 in the morning (except for Meijer, which has become my new hang out).

So while I am adjusting to my "third shift" status, it never fails that at this time every shift I hit a wall.....


although, hitting this wall might not be so bad, I am actually quite fond of this wall....


So here is a toast to the makers of COFFEE, which has become my life line and if I didn't have it someone would have to lift me off the floor or step around me whatever they prefer.

A new "DO"...

This Friday I got the awesome luxury of going to the Salon to get my hair done, and yes to a momma of three boys this is a slice of heaven. I am not sure what it is, the smell of hair dying chemicals, the hairstylist dressed in black, or the fact that for almost three whole hours I didn't have to hear "MOM". Whatever it was I was on cloud nine. So for those of you that care here is my new "DO", for those of you who could careless here is my new "DO"........

Yes...I banged it up, and so happy I did.

A special thanks to my sweet cousin Olivia for working hard on my hair, and bringing me coffee and washing my hair.....oh and letting me be your model so that I didn't have to pay a penny ( btw I owe you lunch:)

"Fancy Chicken"


A few nights ago while I was deeply immersed into Pintrest, I stumbled across this recipe "Lemon Braised Chicken". Immediately I was drooling as I read through the recipe and I knew that I had to make it. However, there is something I must tell you about my lovely husband, while he will eat almost anything and I mean anything ie. squirrel, alligator, frog legs, road kill etc. Okay maybe not road kill, but there is one thing he turns his nose up at  and that is anything he would consider "Fancy". You know things sprinkled in feta cheese and garnished with what he calls weeds. So although I was fit to be tide to try this recipe, I was a little nervous at what he might think.


Lovely isn't it:) So I decided to go against my best judgment, shoot for the stars and make this delectable meal. 

To start off you need a whole chicken, cut it up so that you are left with two breast and thighs with the skin on. Next heat a table spoon of butter and a table spoon of olive oil in an oven safe skillet. As you can see here I pulled out by trusty and loyal cast iron skillet. Then you want to salt and pepper your chicken and  lightly flour it. Place your chicken in the skillet skin down and let it cook for about 12-14 minutes, flipping it once.


While the chicken is cooking you can gather up the rest of your ingredients to make the oh so wonderful sauce. You will need 3/4 cup of chicken stock, 3/4 cup of Sauvignon Blanc (where the rest of it went, I will never tell), 3 cloves of garlic, 4 sprigs of Thyme, 2 Bay leaves, 2 tsp of capers, and about three strips of lemon peel. Fancy very very fancy! Once the chicken is has been on for about 12 minutes remove to a near by plate. Place the garlic in for about 5 minutes until it is nice and soft. Then add your wine and bring to a boil and reduce it by half or cook it for about 5 minutes more.


Seeing that the garlic is having all the fun, the rest of the ingredients will want to join too. So add them in and you will be left with the most mouth watering scent.


Add the chicken back in, remove it from the stove and cover. Then place in the oven at 350 degrees for 30-35 minutes. When done, remove the chicken and discard the Bay leaves, lemon peel, and Thyme (believe me your spouse will be glad that you did). Heat the remaining sauce until it thickens up and then serve over the chicken.

Voila! Serve it with a side of red skin potatoes and fresh green beans.

You may be wondering what my husband thought of this "Fancy Chicken" and believe me I was surprised as anyone. He LOVED it, couldn't get enough of it!!! I was so relived and thankful because I really liked this meal. whew!

Banana Bread Muffins



Are you sick of the same old Banana Bread? Yeah it's okay monkey I understand, that's why this momma switched things up and made JUMBO size Banana Bread Muffins. That's right the bigger the better!


Thanks to these little gems, making those huge muffins that you find in a bakery is easy peasy. Btw you can find these at your local grocery store next to the cupcake papers. Who doesn't love an extra large muffin? Okay so maybe my muffin top doesn't totally agree with these, but we are no longer on speaking terms these days. I totally de-friended him last time he told me that a second or third cookie wasn't a good idea.


Plus, to make things even better Meijer had these puppies on Sale, because if your house is like mine, bananas do not stick around long enough to be made into bread. So what I did was I  doubled my banana bread recipe and it made 24 JUMBO size muffins. You can use your own family recipe or if your looking for a new one you are more than welcome to use my Banana Bread recipe.


Just fill these cups 3/4 full and the best part is they stand up on their own....so clever. Just pop in the oven at 350 degrees and bake for about 20 minutes, let them sit for about 10 minutes.

Your end result is somewhere between heaven and snow:)

I feel like Crap but your so darn Cute

It's Sunday...a day for rest, right? Well lets hope so, because this hot mess has to work third shift tonight and I am fighting off this darn cold. I hate colds! They are so sneaky, just when you think you are on the upswing before going to bed, they pour gallons of snot in your head and you wake up feeling like someone is sitting on your face (not that I know what that feels like or anything, just want to clarify).

So it's really hard  when you feel all crappy and just want to sit with tissues up your nose, to entertain three little boys. I thought for sure I had it made when I put Beyblades on Netflix...if you don't know what Beyblades are then you are sitting better than I am, they are a pain. All this grand gesture did was cause a fight on who got what Beyblade....ugh....

But then in moments like these, through the chaos, things slow down just enough to catch this

Then it's interrupted by reality as I look over at this..
That's right the same pile of dishes that was there last night....Oh well, epic Fail on my part:(

Oh by the way a special thanks to Mema for coming over and picking the boys up so that this tired hot mess of a momma can have a sick day on the couch....I owe ya one!

So if anyone needs me I will be planted on the couch with tissues up my nose.

I am Baaaaack!!!!

Where in the world do I begin???? Let's see.....well we no longer live in Mississippi but again reside in Michigan, which I am super duper excited about. My husband and I decided to make the move back to Michigan, so that he could help run his brother's business. As for me, I had to go back to work full time...big bummer! But on the upside I love my job working in the ER, it is never ever a dull moment! As for my buddies, they are getting huge!!! Keegan is 6, Miles is 3 and my itty bitty Lennon is going to be 2 in just a few months....CRAZY!!!

So here we are in 2012...and one of my New Years Resolutions was to get back on the bandwagon of blogging. Hopefully, you are ready to try and keep up, because if you thought my life was busy and crazy before, you have no idea what you are in store for:)
